july 4th menu (revised)


  • chilled corn consommé & basil
  • potato pop-overs with sweet & sour jalapeño            


  • ume boshi-black berry-pisco sour


  • akaushi beef tartare, purslane, black sesame crouquant, & spicy golden raisin
  • smoked gulf trout , yamabuki miso, puffed rice, cilantro & frothy ver jus
  • charred brandywine tomato gazpacho, foamed basil, fleurs de courgette  & crunchy olive oil
  • bbq chicken. ribbons of celery & aubergine puree
  • risotto de carnaroli, sweet corn puree,  lardo & pea tendrils
  • non-traditional gulf coast crawfish boil & old bay espuma
  • beef shortrib, purple hull peas, smoked ham hock & petite courgette
  • flavors of independence
  • apple confit & condensed milk cremeux served with warm liquid apple pie

    i wish this was at my house, or i wish the home where we did this dinner was my house but it was a tenacity dinner at a private residence in the warwick towers. it was my first year to be able to experience & actually enjoy the firework shows (we had superb views for both the celebrations, allen pkwy & herman park)! pictures will be up asap…
