as usual i started out with photos of every course but then it just gets too deep to keep up but i did capture this shot of chef ben’s infamous “bacon, egg & cheese”…pickled quail egg, bosque blue & shaved tuna bacon


abalone with lavender, buttermilk, crispy potato & smoked mayo


slow poached duck egg with smoked salsify soil & pickled mustard seeds


lobster with coral, lemongrass & crystalized ginger




venison tartare with pickled vegetables & smoked dijon
